Instant Pots make it easy to cook side dishes quickly and easily so you can focus your time and attention on other parts of the meal, and this side is one of our favorites. Start with two pounds of baby potatoes, and use the sauté function on the Instant Pot to brown the potatoes in butter. Then, add garlic powder and chicken broth to the pot, lock the lid, and set the pot for eight minutes. This will finish cooking the potatoes so that the insides are tender and fluffy. While this dish does need to marinate ahead of time, the fact that it cooks up so quickly in the Instant Pot makes that an acceptable trade-off. If you've never heard of biryani, Atlas Obscura says it's a favorite dish across India and Pakistan, and has been prepared in these regions for centuries. Biryani varies from region to region, but generally speaking it consists of seasoned rice cooked with meat and dozens of spices and aromatics including saffron, rosewater, garlic, ginger, cardamom, and cinnamon. 

This version brings together ingredients that are easy to find in U.S. grocery stores. Before they go in the pot, chicken thighs need to marinate in lemon juice, yogurt, and spices for a minimum of three hours. This means that you can start the marinating in the morning or even the night before you plan to cook it. After giving chopped onions a quick sauté, the marinated chicken, rice, and broth cook up in just 15 minutes in the Instant Pot. Serve it with pieces of naan bread and garnish with cilantro and sliced chilies.

Chickpeas are another staple that are easy to prepare in your Instant Pot, and are great to have on hand to whip up lots of snacks and meals. 20. Instant Pot Kettle Corn

Your Instant Pot can also make a quick snack perfect for movie nights and after-school snacks: kettle corn. The ingredients are very simple: Popcorn kernels, olive oil (or any kind of vegetable oil), and salt. There's also a little bit of sugar in the mix, which gives the sweetness that makes kettle corn one of our most favorite fair food snacks. 

Instead of locking the ingredients in the Instant Pot to cook up under pressure, in this recipe you use the appliance much like you would a regular pot on the stove. Set the Instant Pot to the sauté setting, and once the oil and ingredients are hot place the lid over the top. Give the covered Instant Pot a few gentle shakes as the popcorn kernels pop, and in just two or three minutes the kettle corn is ready to serve. It pops up more reliably than when done on the stovetop, and without all the additives and preservatives in microwave popcorn.

Your Instant Pot is a great tool to quickly prepare a batch of healthful grains to serve for dinner, or to create days of easy lunches. Bob's Red Mill includes sorghum, a nutrient-packed whole grain that's a great choice for gluten-free diets, in their line of many packaged whole grains, and notes it can take as long as four hours to cook in a slow cooker, or an hour when cooked on the stovetop. In your Instant Pot, sorghum is ready in just 30 minutes.

All you need besides the sorghum is water and a little salt. Once the grains are cooked there may be some water left over, which can just be drained off. You can eat the sorghum immediately while hot, or let it cool and enjoy it chilled in salads, grain bowls, or wraps. It's a delicious and hearty addition to mason jar salads, too. Cooked sorghum can also be frozen for longer storage.

If you love a spicy-hot dish, then this is the recipe for you! It transforms plain old chicken breast into a flavorful and saucy dinner. They all get blended into a thick paste that goes into the Instant Pot first. A brief sauté helps bloom the flavors to their maximum potency. The only time-consuming part is peeling those apples. You may only think to make this classic dinner once a year on St. Patrick's Day, but with this recipe you may decide to make it more often. The Instant Pot not only turns out a meltingly tender corned beef, but it also cuts the cooking time down significantly. 

This Irish-American favorite consists of a large corned beef brisket that you can pick up from your butcher or most large grocery stores. Traditionally, the corned beef gets a long, slow simmer with carrots, cabbage, and onions which makes the meat very tender — Taste Of Home shares that this can take about three hours on the stovetop. However, placed in the Instant Pot on a bed of onion, garlic, and seasonings, a corned beef brisket is ready in just 90 minutes. And it only takes another five minutes to cook the carrots and cabbage. Mashed staff found that the meat was also more flavorful and more tender when cooked this way — so there's no reason not to give this recipe a try!

With this recipe, you can host some of the best summer feasts ever with this recipe, even if it's not summertime! And because everything's cooked right in the Instant Pot, it cooks up quickly with no need for giant pots of boiling water or outdoor cookers. 

According to AllRecipes, shrimp boils (or Lowcountry boils) are a favorite tradition in the South because they're about more than just the food: They're a great reason to get people together for a party. The combination of cooked shrimp, sausage, potatoes, and corn are typically spread over a newspaper-covered table where guests can gather and dig in together. This recipe starts with placing baby potatoes, corn on the cob chunks, sausage, and onion in a broth flavored with pilsner beer and Old Bay seasoning. Locked into the Instant Pot, the food is done in just five minutes. The shrimp goes in next to cook on the sauté setting, and takes only four minutes. Served with garlic and Cajun-spiced melted butter, it's a dinner event your guests or family will never forget.

It seems like there should be nothing easier than simply cooking an egg. That's what makes it so frustrating when hard-boiled eggs don't turn out as perfectly as they should. But in the Instant Pot, the whole process takes only 15 minutes and turns out well-cooked and easy to peel eggs.

Pressure cook the eggs for five minutes and then let them sit for five minutes longer as the steam escapes. Simply Recipes attributes this to steam forced under the eggshell during the pressure cooking. Whatever the reason, it seems we've finally found a way to make hard boiling eggs a simple task.

39. Instant Pot Pork Shoulder Roast

Large roasts make such perfect comfort food meals: hearty, warming, and full of flavor. For those days when you really want to make a roast but don't have tons of time, pull out your Instant Pot. A typical pork shoulder roast prepared in the oven takes more than four hours (via Food Network.) An Instant Pot cuts that time down to about 90 minutes. 

In this recipe, the pork shoulder is rubbed with salt, pepper, and brown sugar, but you can also add your favorite spice blend. The seasoned roast is placed on the trivet inside the Instant Pot over a pool of vegetable stock, onion, and garlic. Lock the pot and pressure cook the roast for an hour and a half. Once it's done, add potatoes, carrots, or other root veggies to the pot and cook for another five minutes. The pork shoulder roast makes a delicious dinner, and leftover pork can be used in all kinds of dishes.

This is another recipe that makes a normally time-consuming dish quick and easy to prepare. If you're not familiar with polenta, think of it as a kind of porridge made from cornmeal. It's boiled until the cornmeal transforms into a smooth and sweet pudding-like consistency. Polenta typically needs about 45 minutes of cook time and frequent stirring when made on the stove top. In an Instant Pot, polenta is ready in just 20 minutes. And all you need is cornmeal, water, and butter. 

Polenta can be enjoyed in lots of yummy ways, the simplest of which is just to eat it as a side dish with a sprinkle of chopped herbs or some shredded cheese. Bags of these dried beans are easy to find at grocery stores and inexpensive. You could spend hours braising or smoking pork shoulder to make a batch of barbecue pulled pork — or you could make it in your Instant Pot in just 45 minutes! Don't get us wrong: There's nothing quite so delicious as meat cooked low and slow in a wood smoker, but when you want that tangy, spicy pulled pork quickly it's great to have this recipe at hand.

You'll need two pounds of pork shoulder or pork shoulder steaks, seasonings like garlic and onion powders, and a generous pour of Coca-Cola. Other sodas like Pepsi or Dr. Pepper can also be used. Cut the pork shoulder into smaller pieces and coat them with the spices before placing them in the Instant Pot with the soda. After 45 minutes, the pork will be fall-apart tender and ready to pull into shreds. Then toss the pulled pork in your favorite barbecue sauce, and serve it up. Besides sandwiches, The Spruce Eats shares that barbecue pulled pork can also be added to mac and cheese, used as filling for empanadas, and more.

46. Instant Pot Steamed Artichokes

Want to make an easy appetizer for your family or friends? Get out your Instant Pot and make these easy artichokes. It only takes about 30 minutes!

The only prep work for this recipe is to cut off the artichoke stems and about one inch of the tops. You can also trim the tips of the leaves if you wish. Set the artichokes on the rack in your Instant Pot with some water underneath. Once the pot comes up to full pressure, the artichokes will cook for 20 to 25 minutes; you'll know they're done when the stem end can be pierced with a knife and the leaves release easily. Set them out with some melted butter or your favorite dipping sauce — so easy! Make sure that you and your guests know the right way to eat an artichoke, then dig in!

It'll keep in the fridge for five days, but your best bet is to freeze it in an ice cube tray then transfer the cubes to a freezer bag. The easy-to-grab cubes will last in the freezer for up to three months.

Before we found this recipe, all we knew about Swiss steak was that it was one of those foods that frequently appeared on hot lunch trays in the school cafeteria. Thankfully, we now know it can be a deliciously tender and flavorful meal that's a far cry from those days of mystery meat! And because it's made with inexpensive, bottom round cuts of beef, it's a filling dinner that won't break the bank. 

Normally this tough cut of beef would be pounded with a meat mallet to tenderize it, but in this recipe you can just slice the beef into thin cutlets — the Instant Pot takes care of the tenderizing. The beef is dredged in a blend of herbs and seasonings and then quickly seared in the pot. This is a fantastic way to use your Instant Pot! We love freshly-cooked summer corn on the cob slathered in butter, but don't always love having to bring a big pot of water to a steamy boil on a hot summer day.
