BBQ Half Chicken
A simple spice rub goes over the entire surface of a half chicken before it goes on the grill, where it cooks up in just under an hour. Brush the meat with some barbecue sauce, grill for a few more minutes, and serve it (preferably with potato salad, thick fries, or grilled okra).
Grilled Spare Ribs
Coat the spare ribs with a dry spice rub (brown sugar, garlic, cumin, and pepper are recommended), seal them in a foil pan, grill them for about two hours, and lastly, brush them with barbecue sauce. Serve your ribs with potato salad and grilled corn on the cob.
Mexican Street Corn
Tie back the husks of the sweet corn to make a handle, then grill the ears to make the kernels tender and browned. Spread the corn with a cotija cheese blend, then add premixed taco seasoning, a Mexican spice blend, or even just a simple shake of chili powder.
Tomahawk Steak
This recipe was shared exclusively with Mashed by Rasheed Phillips, runner-up of Netflix's "The American Barbecue Showdown." When the steak cooks, use a herb bundle as a brush to baste it with a lemon juice-butter mixture and serve it with slices of blue cheese compound butter.
Spicy Grilled Shrimp
After the peeled and deveined shrimp are briefly marinated in a zesty mixture of chili garlic sauce, cayenne, Worcestershire, and lemon juice, they go straight to the hot grill, where they cook up in only six minutes. Serve them hot with cole slaw, Caprese salad, and corn on the cob.
