Cannoli Cookies Combine The Best Of 2 Desserts

There are numerous recipes for cannoli cookies. While none could be considered a standard version, they are all meant to resemble the flavor of the classic Sicilian dessert.
A cannoli cookie is a fat, puffy drop-style made with ricotta cheese. While prominent when sweetened as a cannoli filling, the ricotta adds more fluff than flavor to cookie dough.
Flavor enhancers include chopped pistachios, orange zest, mini chocolate chips, or grated chocolate. Some are decorated with chopped chocolate or powdered sugar.
Rather than incorporated into the dough, ricotta can also be used as a filling in sandwich cookies or used to replace the jam in a cannoli variation of thumbprint cookies.
