There are different kinds of flour currently on the market, and each one has its uses. Many baking recipes call for cake flour due to its finer consistency and less gluten than all-purpose flour, and Food Network star Duff Goldman recently shared a technique to make homemade cake flour.
To turn regular flour into cake flour, Goldman suggested adding just two tablespoons of cornstarch to every cup of all-purpose flour. Since baking requires precise measurements, using a kitchen scale is the best method for adequately measuring ingredients, as per King Arthur Baking.
If a scale is unavailable, the other method is to spoon the flour into the dry measuring cup and sweep off any excess. This sweeping technique used in measuring cups and spoons for flour and other dry ingredients will ensure the exact measurement.
