For Perfect Pie Crust, Learn This Blind Baking Hack
by HANNAH SKINNER
The biggest mistake you can make when blind baking a pie crust is not weighing it down; if you don't, cracking or shrinking may occur.
Fortunately, some bakers have developed a hack that goes beyond lining the dough with parchment and filling it with beans.
To keep the dough secure on all sides during a blind bake, cover it with another pie pan, flip it upside down, and add a baking sheet or two on top for additional weight.
This method creates a sturdy, evenly shaped crust without bubbles or cracks, perfect for your no-bake or wet-filling pies, like apple or pumpkin.
