Here's What Andrew Zimmern Really Thinks About Expensive Knives

Chef Andrew Zimmern said in his weekly Ask Me Anything segment that for him, knives that cost "hundreds of dollars" is in the “mid-range,” and he owns a far more expensive collection of knives. "I probably have 200 knives and some of them [...] are worth a fortune," says the chef, who admits to using only half the knives he owns.
Zimmern advices that a good chef’s knife is a long-term investment, so each knife can cost between $50 to $100. He says that when buying a knife, the blade is of real importance because “it’s really all about the steel,” but you should get a home knife sharpener or sharpen your knives twice a year.
On the highest end, the German Nesmuk Jahrhundertmesser 2010 has a Damascus steel blade with a 5,000-year-old wooden handle set with 25 diamonds, priced at $81,000. However, you don’t need to shell out a fortune for them too, because Zimmern says that mass-produced knives with a plastic handle work just fine.
