Ice Cream Bread Is The Classic Recipe That Blurs The Lines Of Cake
By COURTNEY KALEAL
Ice cream bread, a recipe shared by TikToker @bdylanhollis and originally from a 1974 cookbook called "Cook Book," has captured the attention of Gen Z.
Ice cream bread is made from a half-melted pint of ice cream and self-rising flour. The crumb resembles bread more than cake but carries a hint of sweetness from the ice cream.
If you’re wondering how ice cream bread works, first note that ice cream is composed of milk, eggs, and sugar, which are the same components in many sweet bread recipes.
When mixtures like water or milk are combined with self-rising flour, it triggers the formation of gluten, just like in regular bread.
Don’t microwave your ice cream, as it's crucial to let it naturally reach room temperature, and avoid overmixing as it can lead to tough gluten formation, resulting in chewy bread.
Feel free to experiment when baking, since low-fat ice creams could yield a differently flavored bread due to their lower fat content, and this also applies to the texture.
If you don't have self-rising flour on hand, you can use 2 cups of regular flour, along with 3 teaspoons of baking powder and 1 teaspoon of salt.
