Make Lasagna For One With A Tiny Loaf Pan
by MARIA SCINTO
Measuring about 6x3 inches, mini foil loaf pans are perfect for individual lasagnas. Economically priced, they usually come in packs.
You'll only need a noodle or two to make lasagna for one. There's no need to boil them, as the tomato sauce in a standard recipe is wet enough to cook the noodles as they bake.
Break one noodle to fit the pan, then layer it with ricotta, marinara or meat sauce, and mozzarella. Repeat the layers, and finish off with a generous dusting of parmesan.
Bake it in the oven at 350 Fahrenheit for about 30 minutes or until the noodles are soft and the filling is hot. Alternatively, it can be cooked on a stovetop.
Cover the pan with foil and place it in a pot with water that comes about an inch up the sides of the pan. Simmer with a lid for half an hour.
