The Better-For-You Pasta Dish Rachael Ray Swears By

The “Rachael Ray Show” website has an entire section dedicated to healthy living, with health-focused recipes that have Ray’s signature emphasis on speed and simplicity. In September 2022, the show’s Twitter account shared one such pasta recipe, loaded with several healthy ingredients that help the immune system.
The recipe in question comes from Boston-based chef Michael Schlow, who created a creamy fettuccine pasta full of ingredients inspired by Dr. Wililam Li’s list of 10 foods that boost your immunity. Schlow utilized tomatoes, mushrooms, extra virgin olive oil (EVOO), and pecans for the recipe, and a pomegranate drink on the side.
Tomatoes contain Vitamin C and antioxidants, mushrooms “modulate” the immune system, while EVOO has anti-inflammatory qualities. The chef made the pasta by sautéing the tomatoes and mushrooms in EVOO with some garlic and rosemary, and topped it all with chopped and roasted pecans — which are full of minerals like copper and zinc.
