The Overlooked Difference Between Egg Rolls And Spring Rolls
By RACHAEL GROW
Spring rolls and egg rolls may seem similar, but there are a few key distinctions between the two appetizers when it comes to their cooking methods, ingredients, and textures. In fact, it's easy to spot the differences if you place them side by side or bite into them, and if you know what to look for.
Egg rolls have a crunchy, egg-coated wrapping made of wheat flour that is fried, making their texture more dense than spring rolls. An egg roll can contain pork, chicken, or shrimp mixed in with cooked cabbage and other veggies, and the thickness of its wrapper makes it perfect for cooked ingredients and meat.
Spring rolls, on the other hand, have smooth, flaky, thin, and sometimes transparent wrappers made of rice flour, and are either baked or lightly fried. Spring rolls are meatless and typically have fresh veggies that are cold and uncooked, all thinly veiled within the wrapper.
