The Pungent Ingredient That’s Great In Chocolate Chip Cookies
by MARIA SCINTO
Surprisingly enough, there is one ingredient you might not think would work well in chocolate chip cookies, but it is a delightful addition: garlic.
While it could be a bit much if you just stirred in chopped garlic with the chips or added garlic powder to the dry ingredients, most recipes tone down the flavor.
A hint of garlic’s spice adds just the right amount of complexity without overwhelming the chocolate. When the garlic flavor is faint, the cookies are delicious.
Honey diffused with garlic is one way to add subtle savory notes, or roasting a head of garlic in oil before adding to the batter will tone it down and add smoky notes.
