The key to pasta is cooking it to al dente perfection, which only takes a little bit of time to master completely. Millions of people all around the world drain their pasta in their sink, but if you do this, you’re doing it all wrong.
Because pasta is a starchy food, some of the starchiness seeps out into the water, and this serves as a perfect thickener for your sauce. However it can be a bit difficult to craft a nice serving of pasta without the plate looking like a red, watery pool of goop.
Use less water when boiling, because too much will end up diluting the starch. If you are cooking your sauce while also cooking the pasta, try scooping out a few tablespoons of the water at a time and stirring it around in the sauce.
