The 'Secret Weapon' Tyler Florence Adds To Chicken Noodle Soup
By KAREN HART
Tyler Florence revealed in an interview that his cooking style is straightforward and American, which is why he prefers using homemade stock in his chicken noodle soup. But, what makes his stock truly stand out is an unexpected “secret weapon” that you wouldn’t normally use when making your stock.
While the Food Network star uses classic ingredients like garlic and mirepoix for his foundation, along with bay leaf and thyme, he also uses a root vegetable to make the broth pop. "My little secret weapon when I'm making chicken stock is a turnip. I really love that smell," said Florence.
Turnips, for those who are unfamiliar with it, is a white and purple autumnal vegetable that can be eaten both raw and cooked. Turnips have a mild and sweet taste, which can become a little pungent as the turnip continues to mature, so it’s best to use smaller turnips in your stock for better flavor.
