According to a former employee, The Cheesecake Factory’s front-of-house staff members go through a week’s training just to memorize the restaurant’s legendary 21-page menu. Flash cards are given to trainees to learn the names, looks, and descriptions of all 250 menu items.
Menu knowledge is tested at the end of the week through a series of written and verbal tests. Despite the training, it can take a couple of months to remember everything, says another employee on Reddit, who admitted they had questions even after a year of employment.
