Turn Those Frozen Potstickers Into An Easy, Steamy Wonton Soup
By SÉAMUS GREGAN
To make the best easy frozen potsticker wonton soup, start by sweating finely chopped scallions or onions for a minute or two in the pot before adding the broth.
Then boil 2 cups per serving of chicken stock, miso soup, or water with a pack of your favorite ramen flavoring added. Add five or six frozen dumplings and bring it back to a boil.
Pork dumplings are best, as they impart richness to the broth as they cook. Before or after cooking, add a little garlic, ginger, or chili for spice.
Season your soup with soy or fish sauce and a few drops of sesame oil. For vegetables, go with fresh bok choy, napa cabbage, or any frozen veggies that you enjoy and have on hand.
Finally, salty soups benefit from a hint of acid, so add a splash of citrus or vinegar. Add an Asian fermented vegetable for maximum affordability, authenticity, and shelf life.
