You Should Start Pouring Boiling Water Over Your Pork

The crucial step to achieving crackling is removing moisture from the skin and pouring boiling water over the pork before roasting jumpstarts this process.
The scalding water helps to open the skin's pores, allowing excess moisture to escape during cooking. This works exceptionally well if you score the skin in 1 cm intervals first.
Boiling water also enhances the overall flavor and texture of the dish. It helps to tighten the skin and render the fat, leading to rich, melt-in-your-mouth meat.
After you pour boiling water over your pork, let the skin dry before you move on to the next step. You can pat it dry with towels, and then leave it in the fridge for a day.
Then, rub the meat with oil, salt, and seasoning, deepening it into the open cuts. The paper-dry skin readily absorbs the oil, and the salt removes any excess moisture.
