It comes from humble, sometimes-mocked kale! Joy Bauer shared her recipe with Today, which only requires a bunch of kale, salt, and nonstick spray. 

Just wash and trim your kale, then tear it into chip-sized pieces (about two inches) and spread them on a cooking spray-coated baking sheet. Then give the kale another spritz with the spray, and sprinkle with salt (or any other flavorings you're craving) before roasting in an oven preheated to 400 degrees Fahrenheit. It's ready to go when the leaves are crispy and beginning to brown on the edges, which typically takes eight to 10 minutes.

While some may turn up their noses at kale, it's worth giving these delicious chips a shot, no matter how you feel about this polarizing green. Kale keeps its nutritional benefits in chip form. This includes a hearty dose of fiber, calcium, vitamins, antioxidants, and other nutrients. According to Joy Bauer, "A serving of these will set you back just 35 calories, and they're rich in beta-carotene and vitamin C."

Plus, it can be even more cost-effective than regular chips in large batches, with kale selling for just $1.25 to $3 per bunch, a significant discount to bagged chips. Kale is a cool-weather crop and peaks in autumn or early winter but can be found year-round at most supermarkets. Those without the time or inclination to make their own can also find pre-made kale chips, though this sacrifices some control over any preservatives or additives that are included.
