Recipe developer Carlos Leo of Spoonabilities is the creative behind this breakfast recipe. Leo shares that his favorite part of the breakfast dish is that it's super simple to whip up and makes a perfect breakfast for during the week. Keep reading to find out how to make these yummy, crustless ham and cheese quiche muffins that will fill you up and make your tummy so happy.

Gather the ingredients to prepare crustless ham and cheese quiche muffins

This dish only requires a few ingredients, and you may have most of them at home already. You will need to round up six eggs, 1 cup of milk, and ham. You'll also need shredded cheddar cheese, green onions, and Dijon mustard. Last but not least, salt, pepper, and non-stick cooking spray complete the list of essentials for this recipe. If you're a vegetarian, Leo shares that "you can use any plant-based protein or substitute the ham for veggies." Once you have everything together, it's time to begin preparing.

Preheat the oven, and prep the egg mixture

Turn your oven to 375 F to preheat. In the meantime, get a large bowl to mix all of your ingredients together. Crack the eggs into the bowl and discard the shells. At this point, you can also add the milk, diced ham, shredded cheddar cheese, Dijon mustard, sea salt, and pepper. Use a wire whisk to mix everything together nicely, and be sure to break up the egg yolks. By the time you're done with the mixture, it should look like scrambled eggs.

Spray the muffin pan

Get out your favorite non-stick cooking spray, because you'll need it for this next step. You will also need a muffin pan that fits at least 12 muffins, which is exactly what this recipe calls for. Spray each slot with non-stick cooking spray to ensure the quiche muffins slide out easily when they are done baking. Now it's time to measure out ¼ cup of egg mixture, and pour it into each of the 12 muffin tin slots.

Pop the tin into the oven, and set your timer for somewhere between 20 to 22 minutes. Alternatively, you will know the egg delights are done when they begin to puff up and set. They'll also be brown on top. Be prepared to have a very scrumptious smelling kitchen very soon.

Take the quiche muffins out of the oven, and enjoy

When the timer dings, take your baking tray out of the oven, and let the quiche muffins cool. Once they are cool, you can pop them out of the muffin pan, and enjoy. Leo recommends serving these delicious bites with a salad or some toasted bread. Obviously, hot sauce or salt and pepper are other good toppers. If you have any leftovers (which you probably will not, because they're so darn good), they will stay fresh for about four days in the fridge.
