When the craving for grilled cheese hits, nothing will help until you get yourself a perfectly gooey and savory sandwich, well-toasted to your desired level of crunchiness. It's only after you have consumed every crumb of this piece of heaven that you can get on with your life. Naturally, everyone has their own preferences for what makes the best grilled cheese, but one easy addition can upgrade it to an almost impossible-to-believe, even-more-delicious sandwich: Worcestershire sauce.

This cue takes inspiration from a famous British cheese-on-toast dish known as the Welsh rarebit. Worcestershire sauce is an integral ingredient in Welsh rarebit, combined directly into the cheese mix before being toasted and broiled as a hearty open-faced sandwich snack. The untold truth of this condiment is that it is loaded with both ingredients and history. Invented in 1837 by Worcester, England, pharmacists John Lea and William Henry Perrins, its ingredients include vinegar, molasses, onions, anchovies, cloves, and tamarind (per the U.S. website). One of its original ingredients was soy sauce, which likely contributed to its dark color and saltiness. Worcestershire sauce is still used worldwide as a savory, tangy, and subtly spiced sauce worthy of being a secret ingredient in many dishes, including the mighty grilled cheese.

Worcestershire sauce just adds that special something

You can incorporate Worcestershire sauce into a grilled cheese in many ways. For the cheesiest experience, make it like a Welsh rarebit and mix a dash of the sauce into the cheese combination of this ultimate grilled cheese sandwich recipe. If you don't feel like shredding cheese, add the sauce toward the end of the grilling process by carefully lifting the top slice of bread and shaking Worcestershire sauce onto the already-melted cheese. Prefer not to futz with the cheese portion of the recipe? Make a spread by mixing two teaspoons of Worcestershire sauce with two tablespoons of mayonnaise and add it to the bread for extra flavor in every bite.

Or go the more daring route and use it as a dip. Make a grilled cheese as usual, and serve it with a little bowl of Worcestershire sauce on the side. Dip as you make your way through the sandwich. For this particular application, get yourself a bottle of the good stuff. Many brands have their own iterations, but unless you need a vegetarian version, reach for the original Lea & Perrins. Almost 200 years of delicious history can't be wrong.
