Sweet Potato Fritters Recipe

Sweet potato fritters are the best kind of fritters in our opinion, though we'll be honest — we haven't met a fritter that we don't like. Fritters don't exactly have the same shape as a French fry, but it's the same idea — a potato or similar ingredient made with oil so that it's crisp on the outside but still has a nice, soft center. While there are plenty of different fritters to make, we at Mashed have a soft spot for sweet potato since it's a little sweet and a little salty.

Recipe developer Catherine Brookes came up with this tasty recipe that is so good, it should be illegal. "These are super versatile and delicious as a breakfast, snack, or as part of a lunch/dinner," Brookes shares. "And with just a few ingredients, they're so easy to make."

Gather the ingredients

To start, you will need to make a trip to the grocery store to gather all of the items you need for this dish. You will need either one or two sweet potatoes, depending on their size, which can be found in the produce section. Next, make a stop in the refrigerated section and grab one large egg. The recipe also calls for some all-purpose flour, which is commonly used in a variety of recipes, and the great part about it is that you may already have it at home. 

In addition, get some cornstarch, salt, and onion powder. The last two spices you will need are paprika and garlic powder.

Preheat the oven and prep the baking sheet

Once you have gathered all of your ingredients, you can switch on your oven and set the temperature to 430 F. Then, grab a baking sheet and line it with either foil or parchment paper. Set it aside for later use.

Now, take your sweet potatoes and wash them. Then, use a potato peeler to peel them and then grate them. Squeeze as much liquid as possible out of the grated potato with your hands. The more liquid you remove, the better since it will make your fritters crispier.

Mix the potatoes

Need further deets on how to peel and grate? "You simply peel the skin off the potatoes and use a grater to completely shred them down," Brookes explains. Then, go ahead and discard the liquid from the sweet potatoes and add the grated potato to a large mixing bowl. Add all of the remaining ingredients to the bowl, and mix well to combine. Now, it should look similar to a shredded hashbrown mix. 

 In the meantime, spray a little bit of cooking spray onto your lined baking sheets.

Put the sweet potatoes on the baking sheet

Now, squash the sweet potatoes into patties. "Grab handfuls of the mixture and roll it between your palms into a ball," Brookes says. "Then squash it firmly between your palms to flatten it into a fritter shape." Place each one onto the baking sheet. Then, spray some cooking spray on top of each fritter. This will help the tops to crisp up really nicely, just like a French fry would.

Now, you're ready to cook the sweet potato fritters. Wasn't that easy? Pop them into the oven and set your timer for 25 to 30 minutes. Cooking times may vary depending on your oven. Cook until the sweet potatoes are crisp around the edges.

Serve the sweet potatoes

To finish, use fresh herbs for garnish. Now here's the part where all of your hard work pays off! It's time to enjoy these tasty sweet potato fritters. These make a great side to just about any protein, and they would also serve as a tasty appetizer. "They're amazing served with poached eggs for breakfast or with salad and rice as a main meal," Brookes shares. "You can also dip them in hummus, guacamole, mayo, or ketchup." 

These fritters are best when served nice and hot. They're also great with a creamy dip like sour cream or mayo.

  4. Discard the liquid and add the grated sweet potato to a large mixing bowl. Add all remaining ingredients to the bowl and mix well to combine.
  5. Spray a little cooking spray over your lined baking sheet.
  6. Take handfuls of the sweet potato mixture and squash it into patties. Place each on the baking sheet.
  7. Spray some more cooking spray on top of each fritter.
  8. Bake for 25 to 30 minutes or until crisp around the edges.
  9. Serve with fresh herbs and mayo (optional).
