Nickolaus Hines has worked as a journalist and editor for six years. He's covered restaurants, the food industry, and the beverage industry as a freelance writer, staff writer, and editor for various publications. He's covered all things alcohol in New York City as a writer and editor at VinePair and Group Nine. Since then, he's written stories about food, drinks, and restaurants for a number of publications on a freelance basis, including Men's Health, Atlas Obscura, Food & Wine, and Wine Enthusiast. Most recently, he's written about the Denver restaurant scene through feature stories and restaurant reviews for 5280 and the luxury publication Denver Life. He's currently the food and drink editor at the travel publication Matador Network.


Nickolaus earned a Bachelor's degree in journalism from Auburn University: Education based in writing, researching, fact-checking, and editing stories. He is currently in school for a masters in journalism entrepreneurship from University of Colorado Boulder: Studies centered around writing, editing, and running publications.
