Most recently, he's written about the Denver restaurant scene through feature stories and restaurant reviews for 5280 and the luxury publication Denver Life. He's currently the food and drink editor at the travel publication Matador Network.

Education

Nickolaus earned a Bachelor's degree in journalism from Auburn University: Education based in writing, researching, fact-checking, and editing stories. He is currently in school for a masters in journalism entrepreneurship from University of Colorado Boulder: Studies centered around writing, editing, and running publications.
