You'll also want to grab chicken broth, two cans of Great Northern beans, one can of corn, one yellow onion, two cloves of garlic, garlic salt, chili powder, and sour cream. Adding the sour cream to the liquid is what will make this chili creamy, but you can opt to swap out the sour cream for one eight-ounce brick of cream cheese if desired.

After three to four hours, check the chicken in your slow cooker white chicken chili. You'll know the chicken is cooked once it's completely white. Often, it's easy to tell when you stick a fork in the chicken breast and the meat begins to fall apart.

Once the chicken is cooked, transfer the two breasts to another bowl. Using a large fork, shred the chicken breasts into small, thin pieces. If you have a stand mixer, you can shred the chicken in your mixer using the paddle attachment. Or, simply grab a fork or two to pull it apart. Ingredients
  • 6 cups chicken broth
  • 2 boneless, skinless chicken breasts, fully thawed

  • 1 (15-ounce) can of corn

Directions
  1. Mince the cloves of garlic and dice the onion.
  2. Add the thawed chicken breasts to the slow cooker. Pour chicken broth over top.
  3. Add the beans, corn, garlic, and onion to the slow cooker and stir.
  4. Add in the chili powder and garlic salt and stir.
  5. Set the slow cooker to high heat, and allow the chili to cook for three to four hours until chicken is thoroughly cooked.
  6. Once chicken is cooked, remove it and place it in a separate bowl. Shred the chicken with a large fork, and then add it back into the slow cooker.
  7. Add in the sour cream. To avoid it curdling, mix the sour cream with some of the chili liquid in a separate bowl before adding it into the slow cooker.
  8. Once the sour cream is stirred into the chili, allow it to cook another 15 minutes on high heat before serving.
