When it comes to state fairs, we all know that food is one of the main attractions on the midway. And, lucky for fairgoers, the culinary choices seem to increase each year. You have your common, popular fair foods — like funnel cakes, corn dogs, and deep-fried Oreos. And then, there's all the wild and wacky stuff that could make it onto the list of the strangest fair foods in the U.S. We're talking about the foods that make you do a double take, causing you to wonder whether they'll be amazing ... or revolting. Sometimes, you just have to spin the wheel, and find out.

We looked into some of the quirkiest foods of the 2026 state fair season — ones with bizarre ingredient combinations, unexpected flavors, and interesting inspirations. Some of them are a little unusual, and some sound like they'd be a treat; while others, we're really not so sure about. But, are you even at a state fair if you don't take your chances at trying something out of the ordinary?

From cheesy ice creams to pickles being put where they don't belong, we've seen some odd things on state fair menus. Here are some of the weirdest that we found for 2026 — perhaps you'll be inspired to go out and find something wild to eat at your local fair or festival.

North Georgia State Fair: Flamin' Hot Giant Mozz on a Stick

The evolution of state fair food is a wild ride. One day, everybody's content with a simple hot dog on a stick. The next, it had better be battered, fried, and covered in Cheeto dust. The Flamin' Hot Giant Mozz on a Stick at the North Georgia State Fair is a great example of things escalating.

This concoction is brought to you by Sattler Enterprises, a family-run business that has been serving food at fairs for more than 40 years. The treat consists of a giant piece of mozzarella that's battered and fried — no big surprise for fair food — before being absolutely coated in crushed Flamin' Hot Cheetos. The resulting snack is crisp on the outside, gooey in the middle, and nicely spicy, without being totally overwhelming.

It's over-the-top, sure, but it doesn't sound half bad. Plus, it's not overly huge, so you've still got room for more fair food. While this is debuting at the North Georgia State Fair, where it's an entry it the Crazy Fair Food Contest, you might see it making appearances elsewhere, too, as Sattler's vends at other fairs around the country.

Minnesota State Fair: Pickle Pie

Pickles? Great! Pie? Delicious! But combine them, and you have one of the more unusual state fair foods of 2026. At first glance, you might think this is a sweet pie, until you notice the gherkin and the sprinkle of dill on top. That's when you realize it's something altogether different: a pickle pie. We've seen some weird pickle trends in our time, and this one is certainly up there.

The pickle pie, dreamed up by LuLu's Public House, debuted at the Minnesota State Fair. It's a regular pie crust filled with chopped pickles, pickle juice, and cream cheese, topped with ranch dressing and hot sauce piped to look like a swirl of frosting.

Ultimately, if you're a big pickle fan, you'll probably love this pie. There's nothing too strange about the flavor profile — other than it being in the form of a pie, which might be unexpected. But expecting the unexpected is part of fair food fun, right?

New York State Fair: Girl Dinner Pizza

The girl dinner trend began in 2023, showcasing plates of food that ranged from simple to elaborate, requiring minimal prep and featuring shareable, picky bits (think cheese, olives, and salad leaves). This has been riffed on quite a bit in the years since, but the New York State Fair's Girl Dinner Pizza is the version we've all been waiting for. Forget about dainty dinners — this one is for the girls with appetites (people of all genders welcome).

Made by Toss & Fire Wood-Fired Pizza as a state fair special, this pie has a garlic base with a puffy crust that makes mouths water just from looking at it. The pie is topped with Romaine lettuce, garlic Parmesan fries, Romano cheese, and Caesar dressing. The doughy base and perfectly cooked fries are a perfect counterpart to the crisp salad leaves; plus, the dressing is both creamy and zingy. 

It's a weird combination on paper, perhaps. But, in practice, this is the kind of ingenuity that fair food needs. This combination brilliantly balances heavier and lighter ingredients, and it's indulgent — but it's also genuinely delicious, and not just a novelty. 

OC Fair: Deep Fried Tiramisu

Many things get deep fried at the fair: Oreos, pizza, and deviled eggs, to name a few. But, we weren't ready for what we saw at the OC Fair in Costa Mesa, Cailfornia. One stall had battered and fried that classic Italian dessert, tiramisu. If you like your unusual fried fair foods that are sweet, this is one to try.

Don't ask us how you manage to deep fry tiramisu, but Chicken Charlie's sure knows the secret. In some parts, it's oozy and gooey, and in others, more hollow, as the batter has absorbed the dessert — but it's still good. Served with chocolate sauce and powdered sugar, it's exactly the kind of decadent dessert that you want to indulge in at the fair.

If this sounds a bit over the top, it might be — but in a good way. You probably want to share this one with your friends to avoid feeling sick, though, especially if you're hitting the rides after eating.

Florida State Fair: PB&J Funnel Cake Sandwich

There's nothing that weird about a peanut butter and jelly sandwich. But maybe the secret to making the perfect peanut butter and jelly sandwich is forgoing the bread altogether, and switching it for something more indulgent. Enter the PB&J Funnel Cake Sandwich.

From Ryals Concessions, this sweet treat is exactly what it sounds like: peanut butter and jelly sandwiched between two freshly fried funnel cakes. If you love a PB&J, and you're a fan of funnel cakes, this is the ultimate treat. The jelly brings just enough sweetness to the party, and the peanut butter is rich and creamy. Plus, you've got those crisp funnel cakes in place of the bread.

It's an outlandish combination, but it's a mashup of two classics, so it's still very approachable. You're just going to need a couple of napkins so you don't make too much of a mess. If you're looking for a state fair dessert that provides a twist on an old classic, this is a good one to consider.

Wisconsin State Fair: Cream City Cone

Wisconsin State Fair's 2026 food lineup brought us something weird and wonderful: the Cream City Cone. This item combined some iconic Wisconsin foods — like battered cheese curds and melted cheddar — in a new and unusual package.

WürstBar, known for its German food, particularly brats, is the mastermind behind the Cream City Cone. A cone made from pretzel is first dipped in dill pickle mustard, and then is stuffed with bratwurst, mushrooms, onions, and melted cheese. Crowning the top is none other that Wisconsin classic, the battered cheese curd.

The creation is definitely intense, and it's presented in a novel way; but, if it was a brat in a pretzel bun with the same "toppings," it probably wouldn't seem so strange. Ultimately, all these ingredients work perfectly well together. Once you get past the idea of what essentially amounts to a savory ice cream cone, it might just be a new fair food favorite.

Iowa State Fair: America's Berry Good Grilled Cheese

There are a lot of things that you might find in a grilled cheese sandwich. However, if you head to the Iowa State Fair, you'll find America's Berry Good Grilled Cheese Sandwich, which may or may not be "berry" good. It's a weird combination that works for some people, but others aren't 100% sure about it.

In this sandwich, made by What's Your Cheez, you'll find blueberry white cheddar and candied pork belly melted inside caramelized brioche bread, served with a blueberry bourbon jam and raspberry amaretto jam dipping sauce. The sweetness of the berries and jams should contrast with saltiness of the pork and cheese.

But, some fairgoers took to social media to say the flavors did not meld as they should have, and that the sourness of the berries overtook even the pork belly. Others lauded the meltiness and tanginess of the sandwich, saying it was a good mix of sweet and salty. Looks like you'll have to try it for yourself to decide.

Iowa State Fair: Parmesan Ice Cream

When asked your favorite ice cream flavor, the answer might be something like chocolate, strawberry, or even rum raisin. However, we're pretty sure you won't mention any kind of cheese flavor. Well, Parmesan ice cream, which made an appearance at the Iowa State Fair, has entered the foodie chat. It sounds like the sort of weird thing that someone might make up for a fair. But, actually, Parmesan ice cream was a big hit in the 18th century. So, 1776 Parmesan Ice Cream was created by Bubbly Bar and Bistro as an homage to America's 250th birthday.

Thee ice cream has a nutty, savory, and slightly cheesy flavor, but it's not too intense. It's not like eating a mouthful of frozen Parm (whether that's good or bad, we'll leave to you to decide). Once you get used to the flavor, it's actually not extremely different from vanilla ice cream, just a little more complex.

Anyone who wants to taste a treat from the past, or likes their ice cream flavors adventurous, should consider giving this a try. The Parmesan ice cream is served on top of buttery pound cake and tart cherries, so if you end up hating the ice cream, at least you've got the pound cake and cherries to enjoy.

Ohio State Fair: Pickle Me Hot Chicken Pizza

Pickles are everywhere these days — head to your local grocery store, and you're likely to find items like pickle potato chips, crackers, or lemonade. So, it's not surprising that state fairs are following this trend. At the Ohio State Fair, GH Concessions makes Pickle Me Hot Chicken Pizza, which contains a combination of ingredients that might seem strange at first, but actually works brilliantly together.

This pizza is made from hand-stretched dough topped with mozzarella cheese, chicken, sriracha, a drizzle of honey, and pickles. If you're a traditionalist, you might not think that pickles belong on pizza. However, it's worth having an open mind about this.

A bite contains the savory cheese and sweetness from the honey, tanginess from the pickles, and a sweet and spicy element from the sriracha. All told, this gives you a well-balanced pizza with a mixture of rich umami notes, sweetness, saltiness, and sourness. Plus, a little bit of heat and the crunch from the pickles adds to the texture. Ultimately, this is a solid pizza.

Indiana State Fair: Hot Cheeto Fried Oreos

Deep-fried Oreos are a relatively modern invention, dating back to the early 2000s. But in a couple of decades, they've become a fair food staple. Hot Cheeto Fried Oreos, however, are a different matter — and among the stranger foods we've seen at Indiana State Fair, brought to fairgoers in 2026 by The Cookie Jar.

These Oreos aren't fried in just any ol' batter, they're fried in a Flamin' Hot Cheeto mix. Once they come out of the fryer, they're rolled in Hot Cheeto dust. To top that off, they're finished with a nacho cheese sauce. We don't know about you, but we're not sure about this combination. Oreos and spicy Cheetos is already odd enough, but we can see how sweet, salty, and spicy might work well together. However, when you add cheese sauce into the mix, that's pushing things.

That said, some folks who tried them said they tasted much better than they expected. Maybe there's something to be said for the combination of chocolate and cheese, after all. We're not sure that these would be the first treats we wanted to try at the fair, but if you're looking for something wild, Hot Cheeto Fried Oreos are a bold choice.

The Big E Multi-State Fair: Uncrustadouble Burger

If you've ever felt like what your cheeseburger was missing was a couple of Uncrustables, you're in for a treat at the Big E Multi-State Fair — the annual celebration for the six New England states. Here, vendor White Hut serves the Uncrustadouble Burger, and, it's by far one of the stranger state fair foods we've come across this year. But, we're kind of here for it.

In the case of the Uncrustadouble Burger, what you have instead of a bun are two peanut butter and jelly Uncrustables that are fried until crispy. If you've ever had a burger with peanut butter and liked it, this might be something to try.

The peanut butter brings a richness, and the jelly cuts through all those heavy ingredients with some sweetness. It might sound completely bonkers, but, it works. It hasn't got any subtlety to it; rather, it wacks you in the face with big flavors that not everybody is going to like — but it's certainly fair food, at its creative finest.

State Fair of Texas: Flamin' Crunch Pizza

We've already seen Flamin' Hot Cheetos take over mozzarella sticks and Oreos on this list, so it was only a matter of time before somebody put them on a pizza. In 2026, it was Tommy G's Concessions and Catering who created The Flamin' Crunch Pizza, which was a finalist at this year's Big Tex Choice Awards at the State Fair of Texas —and we can see why.

The pizza starts with freshly made dough, but instead of a classic red sauce, it has a jalapeño cheddar queso base. On top of that, there's a mozzarella and cheddar blend. The pie is then baked, and that's when the the really weird stuff starts happening. Once it comes out of the oven, it's topped with whole Flamin' Hot Cheetos, along with a drizzle of jalapeño queso blanco, and a house-made Buffalo buttermilk ranch. And, if that weren't enough, it's then sprinkled with crushed Flamin' Hot Cheetos, for good measure.

If you're a pizza fan who loves spice, or one who loves Cheetos, this oddity might just be for you. Sure, putting Cheetos on a pizza isn't exactly the Italian way, but it is the American state fair way, —and that's got its own charm.
