Step 1: Add the dough ingredients to a stand mixer bowl

To make the bread dough, place the flour, salt, sugar, yeast, and water in a mixing bowl fitted with the dough hook attachment.

Step 2: Mix to form a sticky dough

Mix on medium-low speed until the dough is smooth, slightly sticky, and elastic.

Could I make this bread using a different combination of fruit and citrus?

The combination of lemon and blueberries works incredibly well in this recipe, with the milder blueberries providing pops of slightly tart sweetness and the lemon juice and zest coming through with more robust zesty and bright flavors. I really love this fruit duo and highly recommend trying it the first time you give this recipe a swing, but of course, there are plenty of other fruit-citrus combinations that would work.

To start, it'd be easy to keep the lemon element but swap the blueberries for a comparable fruit, like blackberries or strawberries. Raspberries could be a fun, tart swap, and while they would work with lemon, I think they'd be especially scrumptious with an orange twist. And, when it comes to switching out the citrus of choice, lime is also another viable option on the table. Something like apricots paired with orange would also be vibrant and tasty.

One thing worth noting is that, whichever fruit you end up going with, make sure it's as dry as possible before starting the recipe. Blackberries and raspberries are already pretty safe, since they aren't incredibly juicy to begin with. Dried fruits, like apricots, are an even safer bet. But if you go with strawberries, for example, dry the diced fruit as much as possible (in between layers of paper towels will do the trick) to remove excess moisture before proceeding with mixing in the spices/flour, layering the filling into the dough, and so forth.

What are some tips for incorporating fresh fruit or other inclusions in bread?

As we've just touched on a bit, it can be tricky to incorporate wet, juicy elements into bread. The complicated thing about bread dough is that it requires a specific amount of liquid to encourage rise, browning, and moisture — but at the same time, too much moisture can result in a soggy loaf. So when it comes to inclusions, which in the case of this recipe are both blueberry jam and a fresh blueberry paste, you've got to play your cards just right to hit that moisture sweet spot.

One of my biggest tips for successfully incorporating the fruity filling into this recipe is to follow the (albeit tedious) layering and folding steps to a T. By creating these little pockets of filling throughout the dough as opposed to mixing the fruit inclusions right in, we give the bread a chance to bake around these inclusions without that added moisture being so disruptive. 

Also, you'll notice that we don't go straight in with fresh blueberries, but instead, we create a sort of paste with spices and flour. This gluey paste serves as added protection as the bread bakes and the blueberries release their natural juices. The paste helps keep the berries' juices from reaching the dough and sogging everything up, meaning you'll end up with perfectly baked bread and those delectable little pockets of juicy berries.
