  • Carlos prides himself on having the best chimichurri recipe. He takes the stems out to avoid the bitterness.
  • He wrote down the family sancocho recipe to hopefully immortalize it in an article or cookbook someday.
  • His love for writing led him to become a critic for Odyssey Online and Zerolives.com, writing about video games, movies, and restaurants.

Experience

Carlos has been a writing student and communication-focused professional for nine years. Starting in Consumer Insights at Universal Orlando Resort, he got a sense of how feedback is implemented when received from consumers and became familiar with data gathering. He then worked for them again as an IT shadow and entrance operations attendant. Before finishing his education at UCF, he also worked as a document specialist at Fullsail University, then moved on to Bela Nova as a technical/proposal writer. Carlos became interested in food writing due to his own time in the kitchen and on the grill at home. He loves developing new recipes and recreating family classics.

Education

Carlos has a bachelor's degree in English: Technical Communication from UCF.
